• Isolation of Lactic Acid Bacteria with probiotic potential and antibacterial activity from Ramsar Traditional yogurt

  • Introduction: Generally speaking, Lactic acid bacteria (LAB) with probiotic characteristics and production of antibacterial components such as acids, bacteriocin, biosurfactant, H2O2 and …, can be a safe candidate to prevent pathogens infections. In this study isolation of LAB with probiotic potential and antibacterial effect from traditional yogurt was done.
  • Methods: Isolation and purification of LAB from 15 traditional yogurt samples were done by common methods. To investigate probiotic potential of isolated LAB, complimentary biochemical tests (Acid and Bile tolerance, Carbohydrate fermentation, L-Arginine hydrolysis and …), were done. Antimicrobial activity of isolated LAB against Staphylococcus aureus and Esherichia coli was determined by modified double layer and well diffusion methods.
  • Results: To the result of present study, 8 LAB were isolated .Among them, one gram positive, bacilli form bacterium showed strong probiotic ability and had antagonistic activity against St.aureus and E.coli. According to biochemical tests, this bacterium was recognized as Lactobacillus sp.
  • Conclusion: Lactobacillus isolated from natural sources with probiotic potential and antibacterial effects can be an appropriate candidate to control bacterial infections.
